Learn how to make some straightforward gourmet meals with us!

Come in and consider our Simple Meals Series! Hosted by Executive Chef Andrew Schmidt, this weekly program is designed to teach students how to make quick, convenient, and delicious gastronomic meals. This series aims to target professional workers who still wish to make a tasty dinner at the end of their workday, parents who wish to improve their weekly dining catalog, or simply anyone who wishes to learn new dishes that are agreeable to both their schedule, work-load, and palate! No prior experience necessary to register – all skill-levels are welcome!

Each week follows the same structure. Students will listen to the chef instructor’s lecture and watch his demonstration over the weekly topics before heading into the kitchen to make the respective dishes themselves. In teams of four, kitchen groups will be responsible for each week’s protein, starch, and vegetable-cookery. Once the food is prepared and plated, everyone gets to enjoy a family-style meal of what they’ve just made with a complimentary glass of wine.

Chef and Instructor:

Andrew Schmidt:

Chef Drew is the Executive Chef of Classic Cooking Academy, working both as a diligent administrator and an indelible instructor. He is a graduate of the Culinary Institute of America with over 10 years of hands-on kitchen experience. Drew has an extensive background in plant-based/seasonal menus, refined and rustic cooking techniques, as well as classical French and Italian culinary training. His passion for, and education of, food history/traditional cultural recipes opens the door for a deeper understanding and appreciation of recipes, covering not just how we cook great food, but rather why we cook it in a certain, special way. In his own words, “I aspire to share the stories and artisanal crafts that illustrate how food and drink is an eternal bond between us all.”

Week 4 – Pork

  • Breaded Pork Cutlet, Creamy Mushroom Demi-Glace

  • Creamy Polenta

Week 5 – Shellfish

  • Classic Shrimp Scampi
  • Grilled Asparagus
  • Roasted Rosemary Garlic Potatoes

Week 6 – Lamb

  • Rack of Lamb au Jus
  • Grilled Italian Vegetables
  • Israeli Couscous

Cost:

The Simple Meals Series is $600.00 for all six weeks of classes. Students may not sign up for individual classes. No chef jacket fee is added for this program.

Cancellation Policy:

In the event of a student’s cancellation, refunds are based off of the student’s attendance rate. Please contact our staff with questions if you are considering cancelling your spot.

Notes:

  • No prerequisite classes or prior kitchen experience required. The Simple Meals Series is geared for beginner level chefs and food enthusiasts!
  • If you are unable to attend any class for any reason, you are more than welcome to make it up in a following Simple Meals Series session. Just check our schedule, confirm the date that you need to sit in on, and contact our staff by phone or email so that we can mark you down.
    • We do not allow make-up classes if your registered session has yet to begin. 
  • Certain weeks of the program may be pushed back for other events. Classic Cooking keeps all currently enrolled students updated with any schedule changes.
