DESCRIPTION:SPACE AVAILABLE!  Please call 480-502-0177 to register. \nJoin Chef Instructor Sharon Lunardi for this fun hands-on cooking class!  Sharon will teach you the basic steps to making traditional tamales\, beginning with a demonstration for simple and basic Masa doughs with variations.  Students will participate in making one type of filling.  All students will assemble two of each tamale flavor\, for a total of 8 tamales per person!  The tamales will be steamed in class and served to eat\, along with house beverages. \nCost is $65 per person.  Space is limited.  72 hour advance notice of cancellation is required.  This is a Specialty Class.  No vouchers will be accepted. \nMENU \nShredded Pork Tamales w/ Peach & Roasted Jalapeno Salsa \nBlue Corn Tamales with Calabacitas (Squash) & Cotija Cheese w/ Red Chili Sauce \nHerbed Goat Cheese & Mushroom Tamales w/ Pinon Nuts and Caramelized Onions \nChicken Verde Tamales \n

DESCRIPTION:The word tapa\, meaning cover or lid\, is thought to have originally referred to the complimentary plate of appetizers that many tascas (a frequented bar) would place on top of one’s wine glass – like a “cover.”  Anything\, however\, served in small portions can be considered a tapa. \nThis specialty class offered by Classic Cooking Academy will introduce you to six classic Spanish tapas using fresh meat and fish\, vegetables and cheeses – all of which will combine to deliver unmistakable flavors of the Mediterranean.  While learning to prepare these small plates and dining buffet style with fellow attendees\, quench your thirst with refreshing and colorful homemade white and red sangria (or beer\, if that’s preferred). \nMENU \nGambas Al Ajillo \n(Sauteed Shrimp with Garlic and Spanish Paprika) \nAlbondigas in Chipotle Tomate Sauce \n(Meatballs in Chipotle Tomato Sauce) \nTortilla De Patata & Cebolla \n(Potato & Onion Omelet) \nTomate Rellenos \n(Warm stuffed Tomatoes with Serrano Ham & Manchego Cheese) \nBunuelos De Chorizo \n(Chorizo Puffs) \nMejillones En Manteguilla De Ajo \n(Mussels in Garlic Butter) \nFAQ’s: \n\nClass size is limited.  Reservations are based on First Come-First Serve basis.  Call (480) 502-0177 or write Info@CCAcademy.edu to register.\nClass begins with a complete demonstration and discussion by the Chef Instructor before students enter the professional kitchen to create tapas.\n$65 per person includes buffet-style meal of prepared food\, sangria and beer.  Attendees must be 21 years or older to drink the served wine or beer.\nThis is a Specialty Class.  No vouchers will be accepted.  Cancellation must be made 72 hours in advance of class time.\nGratuity is not included in the per-person fee.  If you kindly wish to leave a tip\, it will be split among all staff including the Chef Instructor\, Server\, Assistant and Dishwasher.\nStudents will receive a full copy of all recipes for use at home.\nPlease wear closed toe shoes and tie back all long hair.\n\n
