This unique series is designed to teach you all about the essentials in the world of pastries. You will walk through essentials such as yeast and pastry doughs, quick breads, cookies, icings, chocolate tempering, individual pastries and assembled cakes only to name a few. The aroma of baking breads, the secret of the very best pastry dough for any pie or tart, decorating that special cake or plating individual desserts – all of these skills will make you the envy of family or friends.

Curriculum:

The Pastry Series Curriculum ranges from basic topics to more advanced subjects.  Students learn through both demonstrative lectures and hands-on lessons in the professional kitchen. Classic Cooking has revised, revamped, and reformed the Curriculum to be as engrossing and exciting as possible. By the completion of the series, students will have developed the fundamental skills and knowledge to cook a bevy of pastries that will garner both attention and hunger.

Instructor – Chef Susan Kolman:

Chef Susan Kolman has been associated with Classic Cooking Academy as early as 2012. She kickstarted her pastry career by attending the very first cooking school that Chef Pascal Dionot had helmed: L’Academie de Cuisine in Gaithersburg, Maryland. After gaining a traditional, French education on pastries, she slowly built up her career as a pastry chef before becoming a pastry instructor. Before leading the 12-Week Pastry Series, Chef Kolman previously taught multiple sessions of the 8-Week Advanced Pastry Series. When she’s not at Classic Cooking, Chef Kolman enjoys making and baking handcrafted wedding cakes, celebration cakes, and other customized desserts. Cost of this Pastry Session – $1,250.00
Payment Plan – Deposit of $275.00 and then three payments of $325.00 on the first class of each month.

Dual Enrollment Discount:

• If a potential student wishes to enroll into both the 24-Week Practical Series and the 12-Week Pastry Series, we will take 10% off of the overall Pastry Series cost (or the second program if the applicant doesn’t register for both concurrently).

Referral Discount:

• If a potential student enrolls in the 12-Week Pastry Series concurrently with a friend/family member/acquaintance/etc., then both students will receive 5% off each.

Refund Policy:

Prior to the beginning of classes, the student is entitled to a refund of 100% of the tuition (minus the $50.00 enrollment fee)

After the first week of classes, the tuition refund (minus the $50.00 enrollment fee) shall be determined as follows:

Cancellation Policy:

Please refer to our Catalog (pages 12 and 13) if you have concerns regarding cancelling your registration.

Notes:

  • If a student misses a class during one week, they may attend a makeup class when the next session of the Pastry Series begins. For any student attending a makeup class, they MUST notify Classic Cooking’s staff first.
      • Registered students are not allowed to have replacement students (friends or family members) attend their spot for a missed class. Missed classes can only be made up in a future Pastry Series session.
  • For anyone interested in enrolling, they may attend one single complimentary Pastry Series class to see what the program experience is like. Anyone attending their single complimentary class may only sit in for the lecture portion; they may not participate in the kitchen portion.
  • Certain weeks of the program may be pushed back for other events. Classic Cooking keeps all currently enrolled students updated with any schedule changes.

Step 3: Pay your deposit online via PayPal (NOTE: Select the payment option that corresponds with your course start date). Deposit payments are $315.00 and includes the Chef Jacket fee.  Payments in full are $1,290.00 and include Chef Jacket fee.
